Recipe: Soul Cakes
Although traditionally eaten on All Souls’ Day, we promise you Soul Cakes taste delicious at any time of year!
Lockdown has inspired an enthusiasm for baking in many. Here’s the recipe for Soul Cakes mentioned in Feast and Faith.
100 g softened butter
2 tbsp. milk
100 g caster sugar
2 egg yolks
250 g plain flour sifted
1 pinch saffron (if available)
1 tsp. allspice
1/2 tsp cinnamon
75g raisins and a sprinkling of candied peel (or 80g mixed dried fruit)
